  1. Preheat the pan to 375 °F (190 °C). Combine the butter and sugar.
    in a bowl and the cream in a mixing bowl. Beat them together until soft.
  2. Beat the eggs in a small amount at a time, then fold in the flour.
  3. Heat the milk in a small saucepan until it is just below boiling. Incorporate into the creamed mixture.
  4. Lightly butter the muffin pan cups and divide the batter equally among them.
  5. Bake for about 20 minutes until the pancakes are well risen and golden.

  6. Slide the pancakes out of the cups and serve with apricot jam and granulated sugar.
