Making a soft loaf of bread with whole wheat flour can indeed be a bit challenging because whole wheat flour contains bran and germ, which can make the bread denser and less soft compared to bread made with all-purpose flour. However, with the right techniques and ingredients, you can still achieve a soft and delicious whole wheat bread. Here’s a basic recipe to get you started:
Ingredients
4 cups of whole wheat flour
1/2 cup of yogurt
1 +3/4 cup of lukewarm water
Pinch of Salt
1 table spoon of honey
2 teaspoons instant dry yeast
Directions
- In a large bowl, combine whole wheat flour, yeast, yogurt, salt.
- Add the water and mix it in the electric mixer
- knead it for about 2- minutes until it becomes smooth and elastic
- Cover the dough with a clean towel and let it rest for 20 minutes. Then stretch and fold the dough from every side.
- After letting it sit for 20 minutes, stretch the dough and fold it again.
- Transfer the dough to a bread pan. Cover the pan and let it proof for one to two hours. It depends on the room temperature.
- Preheat the oven to 500F.
- Lower the oven temperature to 485°F after bread proofing. Put the bread into the oven.
- After 20 to 25 minutes, lower the temperature to 450°F. The total baking time should be 45 to 50 minutes.
- Take it out of the oven and let cool before you slice it.
