  • 1 tbsp Vanilla extract
    3/4 tbsp Butter
    1/4 tsp Ground Cinnamon

  • The Filling
  • 700g (1½ lb) full-fat soft cheese

  • 100g caster sugar 

  • 1 tsp vanilla extract 

  • 1 large egg

  • 150ml or 2/3 cup whipped double cream 

  • For the topping
  • 250g mixed soft berries 

Directions

  • Begin by preheating your oven to 160°C (350°F)
  • Lightly grease an 8-inch cake pan (it’s preferred to use a removable bottom cake pan) to prevent cheesecake from sticking.
  • Place the biscuits inside a plastic bag, and using a rolling pin, crush them until they are finely broken down. ( for the keto base give your crust ingredients a quick blend in the food processor, but do not blend for very long to keep some of the crust.)
  • In a medium-sized pan, melt the butter. Once melted, remove from heat and stir in biscuit crumbs. Or you can place the biscuits in a grinder along with the butter, and thoroughly combine the two until they are well mixed.
